The Legend of Chinese Tea
Legend says that Shen Nong was the first person to discover tea. Shen Nong was born at a time when the human race no longer had enough food. He had a transparent abdomen, and one could clearly see all of his internal organs. When he grew up, he taught the ancient Chinese the practices of agriculture and farming. Although people were then able to feed themselves better, they often got sick or died because they ate things indiscriminately. To help save lives, Shen Nong decided to taste hundreds of herbs: he put the tasty herbs in his left-hand bag – these were for people to eat – and the ones that weren’t tasty he put in his right-hand bag to be used for medicine.
One day, he tried a small, fresh leaf. Because his abdomen was transparent, people could see the leaf cleaning his every organ; afterward, his insides were refreshed and clean. He named this leaf ‘cha’, which means ‘check’ in English. He continued to taste different herbs, using ‘cha’ to detoxify himself whenever he ate something poisonous. However, he died after tasting ‘heartbreak grass’ because it was too toxic and there was no time to eat a tealeaf. Thus, he sacrificed himself to save humanity, and came to be called the ‘Emperor of the Five Grains’. Because of Shen Nong, tea was widely known as ‘medicine’ for a long time.
The Real History
In real history, the tea industry has developed gradually over time.
- In the time of the Western and Eastern Zhou Dynasties (around 3000 B.C.), people began to plant tea trees and used tea as tribute or vegetables.
- During the Western Han Dynasty (2000 B.C.), a commercial tea trade developed, with Chengdu the earliest distribution centre.
- From the Eastern Han period (1500 B.C.), people started to make tea bricks, making the tea easier to carry.
- From the Tang Dynasty (1200 B.C.), tea-drinking culture began to spread to be enjoyed by all social classes. Lu Yu, the author of ‘The Classic of Tea’ in this period, is still respected as the ‘Sage of Tea’ because of his contribution to Chinese tea culture.
- From the Song Dynasty (1000 B.C.), with the improvement of tea-making technologies and more attention being paid to the source or quality of water, tea contests became popular in China. Whipped powdered tea was very fashionable during this time; however, the fashion had disappeared completely by the end of the Yuan.
- During the Yuan Dynasty (700 B.C.), loose tea began to appear, which was very popular among the lower classes in The tea brick still dominated the upper-class market; nevertheless, more and more people were becoming accustomed to drinking tea made from tea leaves steeped in boiling water.
- During the Ming Dynasty (600 B.C.), tea-making technology was developed to make yellow, black and flower tea.
- In the Qing Dynasty (300 B.C.), China became the only country exporting tea. Chinese tea became well known all over the world.
Types of Chinese tea
If you ever have the chance to go to a Chinese tea market, you will find so many different teas for you to taste. You may get confused about how best to work your way through them all to discover the ones you really like. In China, tea is categorised totally differently from the Western tea culture. For example, in the West, teas are often described according to the colour of the leaves; however, in China, the category name refers to the colour of the brew. So, black tea in Chinese culture is called ‘Hong Cha’, meaning ‘red tea’. Confusingly, the term ‘black tea’ is also used to describe tea served without milk in some Western cultures.

On 26 March 2007, Chinese President Hu Jintao attended the ‘China National Year’ exhibition held in Russia and brought four famous Anhui teas, including Huangshan Maofeng, as a gift for Russian President Vladimir Putin.
There is no doubt that Huangshan Maofeng is a first-class green tea. It is made using only the bud and the first one, two or three leaves on the branch. It has a delicate orchid fragrance and a very fresh flavor.

Que She is named for its small and delicate shape which looks like the tongue of a sparrow tongue, originating from the Yibin City, Sichuan province.
Not all fresh tea leaves can be used as the raw material of making Que She, only the freshest tea leaves of the small-leaf tea species can do. Actually, any tea that has the shape of a sparrow’s tongue can be considered as Que She, no matter it is from the Zhe Jiang, Jiang Su, or Anhui province.

Xihu Longjing (West Lake Dragon Well Green Tea) is a very famous Chinese green tea, well known among Chinese tea lovers. Longjing is famous for its natural verdant color, beautiful leaf shape, rich fragrance and mellow taste.

Xinyang Maojian is a well-known Chinese green tea produced in Xinyang City, Henan province. It is made using one bud with one, two or three leaves, according to the grade. The dry tea leaves are straight, thin and evenly shaped, and covered with abundant white fuzz.
Our Xingyang Maojian is Yuqian tea with high grade made from leaves picked before the Grain Rain (19, 20 or 21 April). Temperatures during this period are high, which causes the tea leaves to grow relatively fast; the leaves are also rich in accumulated substances. It is produced by Fuhai Tea Factory in Menghai County, Xishuangbanna, Yunnan province. This Pu’er combines the powerful, wild aroma of Blang Mountain tea with the fruit- and honey-accented sweetness of Nannuo Mountain tea.
This tea cake uses the 1985 tea formula produced by Fuhai Tea Factory; the tea is graded 9. As noted above, Blang Mountain Pu’er tea has legendary status. Nannuo Mountain is another area producing well-known, good-quality Pu’er. Its total tea-producing area is over 21,600 acres, including 12,000 acres of ancient tea plantations. The Blang people actually began planting tea in the Nannuo Mountain area before migrating; the Aini people then took over tea cultivation here. The average altitude is 1,400 metres; the annual precipitation is between 1,500mm and 1,750mm. The average annual temperature is around 16℃ to 18℃. Our 2021 Da Yi 7572 Qizi Pu-erh ripe tea cake is made by the Da Yi Menghai Tea Factory. In 1973, the artificial fermentation technology of Pu-erh tea was successfully developed by the factory. With the continuous maturity of the technology, in 1975, Da Yi 7572 was produced for the first time. Since then Da Yi 7572 is recognised as the most classic Ripe Pu-erh tea cake or even the standard/benchmark of Pu-erh ripe tea by the public even the Pu-erh material markets have been developing for decades. The Da Yi 7572 has a lot more production batches compared with other Pu-erh tea cakes before of its crazily high demand. The batch number of our Da Yi 7572 is 2101.
What is 7572?
7572 is its serial number. The serial number of Pu-erh cakes has a special meaning. The first two numbers refer to the tea formula used. The third number refers to the grade of tea material used – the smaller the better. The last number indicates a particular tea factory.
Therefore, for this tea cake, the ‘75’ means the formula of the tea cake was developed in the 1975 year. ‘7’ means the grade of the tea leaves is level ‘7’ and ‘2’ means it is produced by the Menghai Tea Factory.
Pu-erh made from more delicate tea materials would taste fresher because it is rich in amino acids, and the best Pu-erh is rich in health-supporting substances and strong in flavour. However, it is important to know that Pu-erh made from higher grades of tea is not necessarily better or more expensive. Pu-erh made from lower-grade tea materials could also have a very aggressive aroma which is attractive to many tea lovers. The aroma of Pu-erh would get stronger when it is aged. When aged, lower-grade of Pu-erh can taste much better than the new and high-grade Pu-erh, and of course, aged Pu-erh will normally be more expensive.

Our 2007 Organic Manxi Mountain Raw Pu’er Cake uses sun-dried Shaiqinmao tea leaves (Yunnan big-leaf variety) from ancient tea trees grown on the organic tea plantations of the Manxi Mountain area. It is produced by Fuhai Tea Factory in Menghai County, Xishuangbanna, Yunnan.
The Manxi Mountain area is located at the Sino-Burmese border in the district of Daluo Town, Menghai County. It features a large group of very old large-leaf tea trees, planted by the Blang people over 500 years ago. The plantation belongs to Fuhai Tea Factory. It was awarded ‘organic’ status in 2007.
The taste of this Manxi Mountain organic Pu’er raw cake is mellow and powerful with a very smooth mouthfeel. The aroma is very striking. Mild and pleasant bitterness at the first sip transforms into an impressive, long-lasting, sweet aftertaste within 20-30 seconds. What is 7542?
7542 is its serial number. The serial number of Pu-erh cakes has a special meaning. The first two numbers refer to the tea formula used. The third number refers to the grade of tea material used – the smaller the better. The last number indicates a particular tea factory.
Therefore, for this tea cake, the ‘75’ means the formula of the tea cake was developed in 1975 year. ‘4’ means the grade of the tea leaves is level ‘4’ and ‘2’ means it is produced by the Menghai Tea Factory.
Pu-erh made from more delicate tea materials would taste fresher because it is rich in amino acids, and the best Pu-erh is rich in health-supporting substances and strong in flavour. However, it is important to know that Pu-erh made from higher grades of tea is not necessarily the better or more expensive. Pu-erh made from lower-grade tea materials could also have a very aggressive aroma which is attractive to many tea lovers. The aroma of Pu-erh would get stronger when it is aged. When aged, lower-grade of Pu-erh can taste much better than the new and high-grade Pu-erh, and of course, aged Pu-erh will normally be more expensive.

White Peony is one of the most famous Chinese white teas. It is mainly produced in Fujian province and is made using a single bud and two leaves. Picking time is around Pure Brightness. It is less scarce and expensive than White Needle.
The tea leaves are corrugated, the edges slightly jagged. The backs of the leaves are covered with white fuzz. During brewing, the green leaves open up to reveal the delicate buds like blooming peonies.

Silver Needle White Tea is a well-known Chinese white tea, but very expensive due to a very small yield. It is produced in Fujian province in China, using the most delicate buds picked when the very first tea leaves are appearing in the spring. Only the buds are used – no leaves or stem at all.
The Silver Needle White Tea bud is large，strong and fat. It is long and straight and covered in a pale, silvery-white fuzz resembling a white coat. Our Shou Mei is produced in Pan Xi Town, Fu Ding City, Fujian province in China. Within the white tea family, this tea is a relatively aged one because it contains a large amount of mature tea leaves. It is plucked after the pick of White Peony tea and the White Hair Silver Needle tea. Its material is Da Bai Large white tea leaves, Shui Xian tea leaves or the group-species Xiao Cai Cha tea tree leaves as the raw materials. It normally uses the picking standard of “one bud with two or three mature tea leaves”. However, due to the low yield of Xiao Cai Cha nowadays, our 2016 Fu Ding Shou Mei is using Fu Ding Da Bai tea leaves as its raw material.
